VINEYARDS

We care for the environment and the land that was gifted to us by our ancestors; and we also care for the life that is found there.

Since 2006, all of our vineyards have been organically farmed, as certified by Sohiscert. We use traditional farming methods based on respect for the vines and the land, and utilise new technologies in order to optimise our processes and produce balanced wines of the very highest quality. We fertilise our soil sustainably, applying only those nutrients that are necessary and using techniques that seek to minimise the emission of greenhouse gases. We also strive to make intelligent use of water.

We grow different varieties of grape, both native and foreign, all of which are perfectly adapted to the soil and climate conditions of La Mancha.

We have 120 ha of our own vineyards, distributed in various locations throughout the extensive plains of La Mancha and sitting at an altitude of 650 m. This region is characterised by an extreme continental climate, which brings with it a high annual temperature range (in terms of variance between summer and winter and day and night) and sunny weather for most of the year. The soil is a mixture of clay, sand and lime, and boasts an excellent capacity for nutrient retention and enables the grapes to ripen rapidly. Thanks to these exceptional growing conditions, we are able to produce wines that are unique, expressive and full-bodied.

We pay particular attention to the stages prior to wine production and painstakingly monitor our land and our vineyards each year, tending them in accordance with the needs of each plant. Additionally, during the months prior to the harvest we periodically sample and test the grapes in order to determine the best moment to pick them. Only when the grapes have reached the necessary level of ripeness do we harvest them; and we always pick them at night, in order to preserve their properties and aromas as much as possible.

Once we have harvested the grapes we ferment them at low temperatures, subjecting them to continuous controls that enable us to maximise the quality of our wines. This approach, combined with the use of carefully selected yeasts and nutrients of the highest quality, allows us to produce wines that are truly exceptional.
